Bicarbonate of Soda and Baking Soda: Are They the Same?

Bicarbonate of soda and baking soda are actually the same ingredient—sodium bicarbonate. The difference is simply regional: Ireland and the UK use “bicarbonate of soda,” while in the US it’s called “baking soda.”

This ingredient is a key leavening agent in baking. When it reacts with acidic ingredients like lemon juice, yogurt, or vinegar, it produces carbon dioxide bubbles that make cakes, breads, and muffins rise and become light and airy. It’s different from baking powder, which already contains an acid.
